parmesan crusted tilapia

time for another recipe!

this evening when i got home i wanted something to eat. fast! i had some tilapia and salmon from whole foods in the refrigerator. i went with the tilapia because it takes less time to season and it cooks pretty fast. i ended up seasoning all the pieces of fish individually then freezing 3 in sandwich bags and putting a piece of salmon in the fridge for tomorrow.

i didn’t want to cook the tilapia in a pan because it leaves too much to clean up. i know baked is always more healthy, but it takes too long, so i went with the broiler.

what you need:

tilapia filet
vidalia onion
white mushrooms – pre-cut and washed (be sure to wash again)
mrs. dash
italian dressing
fresh lemon wedge
parmesan cheese (in the bottle you can sprinkle on food)
olive oil
garlic powder
mesclun lettuce
balsamic vinaigrette

here are the steps:

  1. wash tilapia in cold water, place in plastic dish/container
  2. poke with fork, season with italian dressing
  3. sprinkle mrs. dash on top – i did not turn fish over – refrigerate
  4. heat olive oil in small pan, sprinkle garlic powder in pan
  5. toss washed mushrooms in pan and cut a few pieces of onion (lengthwise) with a paring knife over the pan
  6. let mushrooms and onion cook a bit then add a little butter (size of the square you would put on toast or in one of those little packets)
  7. i had a few drops of teriyaki sauce left, so i added that as well
  8. fold aluminum so that it has a sturdy bottom
  9. place tilapia on foil
  10. squeeze lemon wedge over fish, use all of it so that it seeps to the bottom. remove seeds that may come out
  11. sprinkle parmesan cheese on top. i probably used too much, but i like parmesan cheese.
  12. fold sides of foil up so they make a makeshift pan. it can fold over the edges, but keep most of the fish uncovered
  13. throw fish in broiler- cook for about 10-12 minutes, until the fish is opaque all the way through. it will probably break up a bit on its own and you’ll be able to see that it’s done
  14. take it out of the broiler – be careful, it will be smokin’ hot. the parmesan should be browned and somewhat crisp.
  15. arrange on the plate with onions and mushrooms. add some mesclun lettuce topped with some balsamic vinaigrette. i added this because there was no color on the plate and i figured i needed something green.

i have no clever transition for this video. first i looked up gone fishin, then i looked up food, then parmesan. parmesan brought up a mashup of willy wonka by a producer named parmesan, then i somehow ended up on these sesame street videos. enjoy!
